Vanilla Bean Oatmeal With Strawberry and Beet Chia Compote
Oats are a staple for breakfast, and for good reason- they're full of carbohydrates that you can use and burn for fuel throughout your entire morning! The addition of protein and the red beet powder in the compote makes this a really nutritious way to start your day.


  • 1 Cup old fashioned oats
  • ½ Scoop MRM Veggie Elite Vanilla Bean
  • ½ Tbsp MRM Red Beet powder
  • 2 Cups water
  • 1 Cup fresh strawberries
  • ½ Tbsp coconut sugar
  • 2 tsp lemon juice
  • 1 Tbsp chia seeds


  1. In a pot, bring the two cups of water to a boil and add a pinch of salt. Once boiling, add your oats and reduce to medium heat. Add protein powder and cook for 5 minutes stirring occasionally.
  2. While your oats are cooking start making your compote. In a small pot add strawberries, lemon juice, and coconut sugar. Cook over medium heat. Using a potato masher or fork mash them up a little bit to release some of the juices. Bring to a simmer, add chia seeds and red beet powder, and cook down for 5 minutes, stirring occasionally. Taste and adjust sweetness as needed.
  3. Add your oatmeal to a bowl, top with compote and any other toppings you desire such as nuts or melted chocolate! Enjoy!
