Vegan Burritos with Refried Beans

Refried beans are a staple in many Mexican recipes such as taco dips and burritos. The pinto beans have a slightly sweet flavor when cooked and add an amazing creamy texture to refried bean recipes. The addition of smoky Mesquite powder and spicy cumin blend perfectly together for amazing flavor!

Directions

For the Refried Beans, you will need:
  • 1 can low sodium pinto beans, undrained
  • ¼ large onion, chopped
  • 1 tbsp MRM Mesquite Powder
  • 1 tsp cumin
  • ½ tsp chili powder
Burritos are typically made using refined, white flour tortillas and stuffed with high fat refried beans, then can sometimes even be deep fried and coated in cheese – these ingredients contribute to feelings of sluggishness and lead to weight gain. Luckily, using unrefined plant-based ingredients such as stone-ground corn tortillas, fresh vegetables and homemade refried beans creates a well-balanced meal that will give you tons of energy and keep you full!   For the Burritos, you will need:
  • 3 corn tortillas
  • 2/3 cup homemade refried beans
  • spring mix lettuce
  • medium heat salsa
  • 2/3 cup fresh corn
  • handful grape tomatoes
  • optional: avocado
