Vitafiber Lemon-Chia Waffles

Have trouble getting enough fiber in your diet? Fiber is so important to regulate the digestive system and it helps keep you full, too! These waffles are super high in fiber from Vitafiber Powder, an isomalto-oligosaccharide carbohydrate (like you see in a Quest Bar) that is resistant to absorption in the intestine.



  • 2.5 tbsp vitafiber powder
  • 1 tbsp MRM French Vanilla Egg white protein
  • 1 tbsp coconut flour
  • 1 tsp lemon extract
  • 1 tsp chia seeds
  • 1 egg + 1 tbsp egg whites
  • ¼ tsp baking powder


  • Preheat your waffle iron and coat with coconut oil
  • Sift the dry ingredients into a bowl
  • Whisk the egg, egg whites, and lemon extract
  • Add the wet ingredients into the dry and whisk well until incorporated
  • Stir in the chia seeds last
  • Pour into your preheated waffle iron and let it cook until done!
