If you are anything like me, you always have a ton of overripe banana's around the house. I always buy them for my kids, and then they start to brown too quick. The best thing about over ripe banana's is that you can easily use them in healthy cooking. This coconut-banana bread was so yummy I made several loaves, and sectioned and froze the extras for later.

Apple pectin has been linked to lower blood pressure, cholesterol and glucose levels while regulating the digestive system. There's no flour or oil in these muffins and they are filled with PROTEIN! I used MRM's Egg White protein powder for this particular recipe. I like using the egg white powder because it is so good for you and it is also a great protein powder for those who are allergic to dairy products.

After many failed attempts, we have FINALLY made the most perfect vegan and gluten free pancakes using protein powder! The trick was the flour - buckwheat was too dense and created dry, flat pancakes, and coconut flour was useless without real eggs, so we tried Garbanzo Bean Flour for these babies and it worked beautifully.

With a busy schedule, eating healthy can sometimes be very difficult. We take advantage of convenience stores and their unhealthy but easy snacks, then feel sluggish, tired and guilty after the sugar high has worn off. These tasty flatbreads are essentially a baked pancake – super easy to make in large batches and the perfect snack to grab when you go out.

Every so often we have MAJOR cereal cravings. There's just something about digging into a big bowl of cereal drowned in cold, thirst quenching milk... it doesn't get much better! However, eating a gluten free, grain free, low carb/sugar diet pretty much nixes any "healthy" cereal options I could potentially have, so we decided to try to make our own, using only a handful of wholesome ingredients that will nourish our bodies.
