Fall is here and that means PUMPKIN!!! Since breakfast is the most important meal of the day, why not add some pumpkin to your morning meal. This batch of pancakes are the perfect way to start celebrating the season. They are simple, delicious and packed with protein. This recipe will make about 10-12 pancakes so plan on sharing with friends and family OR save them as a meal prep.

Salad doesn’t always have to be a lettuce base, you know? This couscous salad has all of the delicious fall and winter flavors we crave- orange, cranberry, spice, and everything nice! Warm and fluffy there is no way this salad won’t please even your most picky dinner guest. We like this salad stuffed into a roasted mini pumpkin, or with some added greens- like arugula or kale. Enjoy!

It’s time to FALL into the autumn season. This chia pudding is packed with protein, fiber, and omega fatty acids. Adding the pumpkin puree and cinnamon really give this recipe a taste of fall. You can also warm this up and eat it with toast, oatmeal, or simply by itself.
