This is easy, because I don't cook anything if it's not easy! If you are anything like me, you always have a ton of overripe banana's around the house. I always buy them for my kids, and then they start to brown too quick. The best thing about over ripe banana's is that you can easily use them in healthy cooking. This coconut-banana bread was so yummy I made several loaves, and sectioned and froze the extras for later.
